Ingredients (2 Servings)

½ cup chia seeds

1 teaspoon pure vanilla extract

1–2 tablespoons pure maple syrup or honey (optional, to taste)

1 cup mixed berries (blueberries, raspberries, strawberries, blackberries)

2 tablespoons almond butter (or cashew butter)

1 tablespoon ground flaxseed (for added fiber & omega-3s)

A sprinkle of cinnamon

Directions

Mix pudding base: In a jar or bowl, whisk together chia seeds, almond milk, vanilla, maple syrup/honey, and flaxseed. Stir well so chia seeds don’t clump.

Chill: Cover and refrigerate for at least 2 hours (or overnight) until thick and pudding-like.

Prepare toppings: Wash and slice berries if needed. Warm almond butter slightly so it’s drizzle-friendly.

Assemble: Divide chia pudding into bowls or glasses. Top with fresh berries, swirl almond butter on top, and dust with cinnamon.
